Carrot Cake Muffins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1/2 cup low-fat milk
  • 1 (8 ounce) can crushed pineapple
  • 1 1/2 cups grated carrots
  • 1/4 cup brown sugar (Sugar Twin)

Directions

  • 1 Combine the dry ingredients in a bowl.
  • 2 Add the remaining ingredients and stir to blend.
  • 3 Spoon into sprayed muffin tins or paper muffin cups.
  • 4 Bake at 350 F for 20 to 25 minutes.
