Carrot Cake Muffins

Ingredients
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 egg
- 2 tablespoons vegetable oil
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1/2 cup low-fat milk
- 1 (8 ounce) can crushed pineapple
- 1 1/2 cups grated carrots
- 1/4 cup brown sugar (Sugar Twin)
Directions
- 1 Combine the dry ingredients in a bowl.
- 2 Add the remaining ingredients and stir to blend.
- 3 Spoon into sprayed muffin tins or paper muffin cups.
- 4 Bake at 350 F for 20 to 25 minutes.
