Cinnamon Raisin Granola

Ingredients
- 4 cups rolled oats
- 2 cups oat flour or 2 cups whole wheat flour
- 1/2 cup unsweetened coconut
- 1/2 cup wheat germ
- 1/2 cup sliced almonds
- 1 teaspoon ground cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon salt
- 1/2 cup oil
- 2/3 cup honey
- 2 teaspoons vanilla extract
- 1 -1 1/2 cup raisins
Directions
- 1 Stir together dry ingredients (oats through salt) in 9x13 baking dish.
- 2 Add oil, honey, and vanilla and stir to combine.
- 3 Bake at 350 degrees for ten minutes; stir in raisins and bake ten more minutes.
- 4 Remove to rack and cool, stirring occasionally to prevent sticking.
