Cranberry Waldorf Salad

Ingredients

  • 12 -16 ounces fresh cranberries
  • 1 (10 ounce) bag mini marshmallows
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 tart green apple, chopped
  • 1 cup red seedless grapes, halved
  • 1/2 cup broken walnuts or 1/2 cup pecans

Directions

  • 1 Rinse the cranberries and remove any stems or leaves.
  • 2 Grind the cranberries and marshmallows together using a meat grinder or chop in a food processor.
  • 3 Turn the cranberry mixture into a bowl and add the sugar.
  • 4 Stir well, then cover and refrigerate overnight.
  • 5 Next day, whip the cream to soft peaks, then gently stir into cranberry mixture.
  • 6 Add the chopped apple (do not peel it), halved grapes and nuts and just mix through.
