Salmon With Ginger Glaze

Ingredients

  • 1/4 cup packed brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon grated fresh ginger or 1 teaspoon ground ginger
  • 4 (6 ounce) salmon fillets, about 1 inch thick,skined
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper

Directions

  • 1 Spray the rack of broiler pan with non-stick cooking spray.
  • 2 Preheat broiler.
  • 3 In a small bowl, whisk together sugar, mustard and ginger.
  • 4 Lightly season both sides of salmon with salt and pepper.
  • 5 Place on broiler rack and brush glaze on top.
  • 6 Broil, 6 to 8 inches from heat for 8 to 10 minutes or until fish is lightly browned and opaque.
  • 7 Serve with a salad of baby spinach.
