Blueberry Nut Bread

Ingredients

  • 2 cups flour
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 1 cup sugar
  • 1 cup blueberries
  • 1/2 cup chopped nuts
  • 2 eggs, well beaten or 1/2 cup Egg Beaters egg substitute
  • 1 cup milk or 1 cup soymilk
  • 3 tablespoons canola oil

Directions

  • 1 Sift together the flour, salt, baking powder, and sugar. Add berries and the nuts.
  • 2 Combine the eggs, milk, and oil; stir into flour mixture until just moistened.
  • 3 Pour into a wax paper lined 9x5-inch loaf pan, or one sprayed with non-stick spray.
  • 4 Let stand 20 minutes.
  • 5 Preheat oven to 350; bake one hour or until done.
