Blueberry Nut Bread

Ingredients
- 2 cups flour
- 1/4 teaspoon salt
- 3 teaspoons baking powder
- 1 cup sugar
- 1 cup blueberries
- 1/2 cup chopped nuts
- 2 eggs, well beaten or 1/2 cup Egg Beaters egg substitute
- 1 cup milk or 1 cup soymilk
- 3 tablespoons canola oil
Directions
- 1 Sift together the flour, salt, baking powder, and sugar. Add berries and the nuts.
- 2 Combine the eggs, milk, and oil; stir into flour mixture until just moistened.
- 3 Pour into a wax paper lined 9x5-inch loaf pan, or one sprayed with non-stick spray.
- 4 Let stand 20 minutes.
- 5 Preheat oven to 350; bake one hour or until done.
