Crispy Fried Sweet Potatoes

Time: 50 mins

Ingredients

  • 1 1/2 lbs sweet potatoes
  • 3 slices bacon, sliced in 1/2 inch pieces
  • 1 small onion, diced
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon sugar

Directions

  • 1 Boil sweet potatoes and cool.
  • 2 Dice sweet potatoes and set aside.
  • 3 In skillet, cook bacon and onion until tender.
  • 4 Add sweet potatoes and sprinkle with salt and sugar.
  • 5 Cook uncovered over medium heat until potatoes are crispy on the bottom.
  • 6 Turn and crisp the other side.
