Potato Soup

Ingredients

  • 1 cup diced celery
  • 1/2 cup water
  • 6 medium potatoes (or as many as you want)
  • 2 cups water
  • 1 medium onion, chopped
  • 2 teaspoons salt
  • 1/4 teaspoon pepper (I use less, because it is too peppery)
  • 3 cups milk

Directions

  • 1 Cook celery in 1/2 cup water, just until tender.
  • 2 Peel and cube potatoes.
  • 3 Place in a 4-quart saucepan with 2 cups water or more depending on how many potatoes you used.
  • 4 Add cooked celery, onion, salt and pepper.
  • 5 Cook until potatoes are tender.
  • 6 Mash slightly to eliminate definite cubes.
  • 7 Add milk.
  • 8 Cook on low till everything is done (30-35 minutes).
