Potato Soup
Time: 50 mins
Ingredients
- 1 cup diced celery
- 1/2 cup water
- 6 medium potatoes (or as many as you want)
- 2 cups water
- 1 medium onion, chopped
- 2 teaspoons salt
- 1/4 teaspoon pepper (I use less, because it is too peppery)
- 3 cups milk
Directions
- 1 Cook celery in 1/2 cup water, just until tender.
- 2 Peel and cube potatoes.
- 3 Place in a 4-quart saucepan with 2 cups water or more depending on how many potatoes you used.
- 4 Add cooked celery, onion, salt and pepper.
- 5 Cook until potatoes are tender.
- 6 Mash slightly to eliminate definite cubes.
- 7 Add milk.
- 8 Cook on low till everything is done (30-35 minutes).
