Red Bean Stew With Pasta (Pasta Fagioli)

Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 cups sliced fresh mushrooms
  • 1 cup sliced carrot
  • 1 1/2 cups water
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 (14 ounce) can less sodium beef broth
  • 1 cup uncooked penne pasta
  • 2 tablespoons prepared pesto sauce
  • 1/4 cup grated fresh parmesan cheese

Directions

  • 1 Heat olive oil in a dutch oven over medium-high heat. Add mushrooms and carrot; saute 4 minutes.
  • 2 Stir in water and the next 4 ingredients (through broth). Cover, bring to a boil.
  • 3 Stir in pasta: cook, uncovered, for 11 minutes or until pasta is done.
  • 4 Stir in pesto; sprinkle each serving with cheese.
