Rustic Vegetable Baguette With Smashed Avocado

Ingredients

  • 1 lb rustic sourdough baguette
  • 1/3 cup Italian dressing
  • 2 small ripe avocados, pitted and peeled
  • 4 small tomatoes, sliced
  • 6 ounces sliced cheddar cheese

Directions

  • 1 Cut bread horizontally in half.
  • 2 Drizzle dressing on cut side of top half of bread.
  • 3 Place both halves on large cookie sheet.
  • 4 Mash avocados until slightly smooth.
  • 5 Spread avocado over bottom half of bread; top with tomato slices and cheese.
  • 6 Broil with tops 4 to 6 inches from heat 2 to 3 minutes or until cheese is melted and bread is slightly golden brown.
  • 7 Top with top half of bread.
  • 8 Cut loaf into 4 pieces.
