Broiled Tomatoes With Olives and Garlic

Ingredients
- 2 medium tomatoes, vine-ripened
- 3 kalamata olives, pitted and minced (or other large brined olives of your choice)
- 1 garlic clove, minced
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
Directions
- 1 Preheat broiler and set oven rack about 4 inches from heat source.
- 2 Combine olives, garlic and olive oil.
- 3 Slice tomatoes about a half inch thick and arrange on a lightly oiled baking sheet, in one layer.
- 4 Brush tomatoes with the olive and garlic mixture.
- 5 Broil, watching carefully, until just bubbling or to your liking.
