Easy Fresh Bean, Garlic and Onion Saute

Ingredients

  • 2 lbs fresh wax beans (can use both) or 2 lbs fresh green beans (can use both)
  • 1 -2 tablespoon olive oil (can use more, and can use both oil and butter) or 1 -2 tablespoon butter (can use more, and can use both oil and butter)
  • 2 medium onions, sliced
  • 3 chopped fresh garlic cloves (or to taste, I use about 2 tablespoons, chopped not minced!)
  • 2 tablespoons grated orange zest
  • 2/3 cup orange juice
  • salt and pepper

Directions

  • 1 Rinse the beans with cold water and trim off ends.
  • 2 In medium saucepan, steam the beans (tightly covered) in about 1/4 cup water until tender, about 5 minutes; remove from water to drain well, and set aside (I pat them dry with paper towels).
  • 3 In a skillet heat the oil or butter (can use both).
  • 4 Add in sliced onions, and chopped garlic; saute for about 3 minutes.
  • 5 Add in zest, 2/3 cup orange juice, salt and pepper to taste.
  • 6 Add in the steamed beans; toss to coat.
  • 7 Heat for about 1 more minute or so.
  • 8 Delicious!
