Yellow Tomato Pasta Sauce

Ingredients
- 5 ripe yellow tomatoes
- 1/4 cup light olive oil
- 1/2 teaspoon crushed red pepper flakes
- 4 leaves fresh basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon sugar
Directions
- 1 heat olive oil and all spices and basil in saute pan.
- 2 cut up tomatoes; any size is fine.
- 3 simmer on low for an hour.
- 4 tomatoes will start to break down.
- 5 stir and press them while they cook.
- 6 Cook for about ten minutes if you are pressed for time or an hour for full flavor.
- 7 pour or toss over pasta.
- 8 top with good quality shaved italian cheese.
