Ranch Potatoes

Time: 2 hrs 30 mins

Ingredients

• 2 -2 1/2 lbs red potatoes
• 3 tablespoons olive oil
• 1 (1 -2 ounce) package dry ranch dressing mix
• 1 small onion, chopped (optional)

Directions

• 1 Peel and cube potatoes.
• 2 Throw into a large ziploc bag.
• 3 Add olive oil and ranch dressing mix, and onion, if desired.
• 4 Toss to coat potatoes.
• 5 Pour into a baking dish and bake at 400 degrees for 1 hour.
