Cheese and Olive Bites

Time: 25 mins

Ingredients

  • 1 cup flour
  • 100 g butter, cold and cubed
  • 150 g tasty cheese, grated
  • 60 g parmesan cheese, grated
  • 1/2 teaspoon dried chili pepper flakes
  • 1/4 cup black olives, stoned and chopped
  • 1 egg yolk
  • 1 tablespoon water, more if necessary

Directions

  • 1 Into food processor mix flour and butter, process until fine breadcrumbs.
  • 2 Next add cheeses and chilli, pulse briefly.
  • 3 Add olives, egg yolk and water.
  • 4 Pulse until mix forms large clumps which sticks together when pressed with fingers.
  • 5 Add a little more water if necessary.
  • 6 Roll out onto a floured surface into 2 logs.
  • 7 Wrap logs in glad wrap \u2013 place in fridge for 1 hour, as it is easier to slice.
  • 8 Cut into slices when required and bake at 180C, approx 10 minutes, until golden.
  • 9 Can freeze the logs.
